an afternoon walk & spicy butternut & chickpea soup

The sun is going down and the house is settling into its closed-curtain and roaring-fire state.  I’ve just taken the dogs for a short walk down the driveway because once again this morning we didn’t have time to take them for their usual five kilometre exploration.  Although they sniff at the same bushes and wee on the same tree trunks every single day, you’d swear that every morning it was their first time out in their whole lives and I feel terribly guilty if they don’t get their daily walk.  Also, they stare at me and whine a lot if they haven’t, which is pretty bloody annoying.  Anyway, whilst out on my walk, I was thinking about what to cook for dinner and I remembered this yummy soup I made a couple of weeks ago and thought I must share it with you all over here because it was so yummy.  I’d also quite like to make it right now, but alas, I have no chickpeas.  Perhaps I shall try it with lentils.  Anyhoo, here is the recipe and some pics I snapped from the last time I made it.  And also some pics of the driveway this evening because the light was just too lovely not to take a snap or two, and I don’t have many more evenings like this left in the Midlands.

This spicy butternut and chickpea soup was born out of two essential components: pretty much nothing else to eat in the house, paired with freezing cold winter weather.  I’m not the greatest fan of a traditional butternut soup, but in my drive to eat as local and as seasonally as possibly, the humble butternut has now become a weekly feature in my local vegetable box.  I therefore wanted to create a butternut soup with a bit of a zing and how better to do that than by adding some of my favourite spices (forget cookies, I’m the cumin monster).  My friend, Olivia, who eats vegetarian largely by default (dodgy gall bladder), made this for her husband and three sons the other day and they all couldn’t believe that it was meat and dairy-free!  So vegan or not, give this baby a whirl on a cold day or night this winter.

Ingredients:

1 small white onion, chopped
1 stalk of celery, chopped
1 tablespoon olive oil
3 cloves garlic, peeled and crushed
1 teaspoon cumin spice
1/2 teaspoon ginger spice
1/2 teaspoon coriander spice
1/2 teaspoon mild curry powder
1/2 teaspoon tumeric
1 butternut, peeled and chopped
1 large sweet potato, peeled and diced
1 large potato, peeled and diced
Vegetable Stock of your choice
300ml boiling water
1 tin of chickpeas, drained and rinsed
Fresh coriander and coconut cream to serve

Method:

In a large sup pot, fry the onion in the olive oil for about three minutes.  Add the fresh garlic and celery, as well as the cumin, ginger, coriander, curry powder and turmeric and stir fry the whole lot for another 3 minutes.  Add the butternut, sweet potato and potato.  Stir it all about in the onions and spices for a few minutes.  Add the hot water and veg stock and boil until the vegetables are all soft.  Mash everything up or shove it in the food processor if you want it really smooth.  Add the chickpeas in at the end and cook for another five minutes.  Serve with fresh coriander and a good dollop of coconut cream.

gloomy days

There’s something sacred about a gloomy day. About snuggling deeper into the covers, perhaps padding softly down the hallway in your socks to make a cup of steaming coffee before returning to your warm, dream-drenched sheets. Reading a bit, snoozing a bit. Hopefully indulging in a little cheeky cuddle if you’re lucky. This, however, doesn’t last for long if you have dogs to walk. I threw my camera over my shoulder before I went out on my windy walk this morning, and man am I glad I did so. I love me a moody image and according to my cousin in sunny London, it looks like we’re in the midst of a Norwegian thriller. What are your plans for this Baltic day? I’m currently stuck into A Game of Thrones by George R.R. Martin and with every turn of the page I grow more and more envious of his fabulous storytelling skills. I’m also still battling a little with this cold so am trying to keep as warm as possible whilst sucking on a bottle of Echinaforce. I promised myself I would pack at least three boxes today. And here I am… writing a blog post. Lol.

Have a happy weekend x

a new beginning

Well, this is awkward. I haven’t written an introductory post to a blog in over four years! If you’re one of my old readers, hello there friend – good to see your face around these parts. If you’re a new reader, thank you for swinging by to my little online happy place. If you’d like to know more about me, click here to catch up. I used to write over at Midlands Musings, a blog that started off being about the place I live(d) in and then gradually became a personal place where I spilled about so much more than the things to do and places to see on the Midlands Meander. Perhaps when I started that blog, I didn’t forsee it becoming as popular as it did or think that I would ever leave the Midlands. Looking back, I should have maybe called it something less area-restrictive, as now the time has come to pack our bags (and indeed, our entire house), load the dogs and cat into the car (lawd help us), and head south to the little city (town? I don’t even know yet) of Stellenbosch in the Western Cape.

The next few weeks are going to be pretty interesting. We have exactly seventeen days left to pack until we head off to the UK for two weeks to visit friends and family before pretty much heading straight down to our new home in the Western Cape on our return at the beginning of August. There are VISA’s to sort out, business branding to work on, farewells to say and piles of baggage (both physical and emotional) to get rid of before this all happens. So, of course, now would be a perfect time to introduce this new little home of mine on the interweb – just in case I didn’t have enough on my plate! Lol. But I’m so excited to settle right in here and get saggy-old-pyjama-bottoms comfy in my very new, but very familiar skin.

The name we are the wildflowers came from my love of wildflowers. I have been known to delay hikes with my desire to photograph every single little petal-fanned jewel I come across. I’m also obsessed with all quotes to do with wildflowers. The idea of something being free and unique and perhaps just a little off the wall is something that I can identify with. From the outset, I wanted this site to be as simple and clutter-free as possible. Somewhere along the way, Midlands Musings got lost in so many categories and pages that I got all tangled up too. This site will have three different categories and the subject matter will largely be about travel (wander), yummy plant-based food and wine (gastro), and of course my own ponderings on life as we go about muddling our way through it (stories).

I can’t promise to write every day. I can’t promise that I will always have something earth-shattering to share with you. I can’t promise that I will always write about pretty or agreeable things… but what I can promise you is honesty, perhaps a little sadness and hopefully, more often than not, tons of good fun and a whole lot of spirit. Welcome, welcome! xxxImage by Kate Martens Photography
